Pistachio Date Bites

Ingredients:
for the pistachio butter (this makes extra):
- 1 cup pistachios (160g)
- 2 – 4 tablespoons melted coconut oil
- optional: pinch of salt
for the bites:
- 8 – 10 medjool dates
- 1/3 cup pistachio butter (80 ml)
- 4 – 6 pieces of melted 80% dark chocolate
- handful of crushed pistachios
- flaky sea salt
Instructions:
- Open up each date, remove the pit, then lay it flat on a baking pan or plate lined with parchment paper
- Press each date down with a glass to smash it until it’s as thin as you’d like
- If you are making the pistachio butter from scracth: add pistachios and oil into a blender or food processor and blend until smooth. Add less oil first and then add more if needed
- Top the dates with the pistachio butter (this recipe makes extra pistachio butter)
- Melt the chocolate in the microwave and add it on top of the bites. Top with sea salt flakes and crushed pistachios
- Let set in the fridge or freezer until the chocolate has set and enjoy!
