Pistachio Date Bites

Ingredients:

for the pistachio butter (this makes extra):

  • 1 cup pistachios (160g)
  • 2 – 4 tablespoons melted coconut oil
  • optional: pinch of salt

for the bites:

  • 8 – 10 medjool dates
  • 1/3 cup pistachio butter (80 ml)
  • 4 – 6 pieces of melted 80% dark chocolate
  • handful of crushed pistachios
  • flaky sea salt

Instructions:

  1. Open up each date, remove the pit, then lay it flat on a baking pan or plate lined with parchment paper
  2. Press each date down with a glass to smash it until it’s as thin as you’d like
  3. If you are making the pistachio butter from scracth: add pistachios and oil into a blender or food processor and blend until smooth. Add less oil first and then add more if needed
  4. Top the dates with the pistachio butter (this recipe makes extra pistachio butter)
  5. Melt the chocolate in the microwave and add it on top of the bites. Top with sea salt flakes and crushed pistachios
  6. Let set in the fridge or freezer until the chocolate has set and enjoy!
