Fudgy Brownie Cookies
If you love brownies and cookies, you’ll be obsessed with these fudgy brownie cookies. They’re the ultimate combination of rich chocolate flavor and a soft, chewy texture that melts in your mouth. Plus, they’re super easy to make with just a few simple ingredients you probably already have in your pantry. I used all purpose gluten-free flour mix in these, but if you aren’t coeliac, intolerant to gluten or IBS sufferer, you can of course use wheat flour in this recipe!
What makes these cookies extra special is how versatile they are. Serve them on their own for a chocolatey treat, or get creative and turn them into delicious ice cream sandwiches! The intense cocoa flavor pairs beautifully with a scoop of vanilla ice cream, making the perfect balance of sweet and creamy.
