This 1-minute Brownie Cookie is a perfect treat when you suddenly crave something sweet. It is called a 1-minute cookie because it takes less than a minute to cook it in the microwave. This Brownie Cookie (Brookie) is super fudgy and chocolaty, like a combination of brownies and chocolate cookies.
I used maple syrup as the sweetener in this recipe. However, you could replace it with other liquid sweeteners like honey. This recipe contains peanut butter, but if you are allergic to peanut butter you could replace it with any other nut butter, for example, almond butter or hazelnut butter. Sunflower seed butter should work as well. You can switch things up to modify the recipe to your liking.
Tips for making this 1-minute Brownie Cookie:
- If the batter looks too loose, you can add 1-2 tablespoons flour. The consistency depends so much on what kind of peanut butter and which sweetener you are using
- Spread the cookie on a plate lined with parchment paper. This way it won’t stick to the plate
- I cooked this for 40 seconds in the microwave (800W). The time 40-60 seconds depends on the watts of your microwave
- If you don’t have a microwave, you can also bake this cookie in the oven at 180 Celsius degrees (350 in Fahrenheit) for 7-10 minutes depending on how cooked you want the cookie to be
- You could also cook the cookie on a pan with a little bit of olive oil. This way you get a lot crispier cookie.

- 1-2 tablespoons maple syrup
- 1 tablespoon peanut butter
- 1 tablespoon cacao powder
- 1 tablespoon dark chocolate chips
Instructions
- Mix the egg yolk, maple syrup and peanut butter together
- Add the cacao powder and stir until combined. If the batter looks too loose, add 1-2 tablespoons flour
- Spread the cookie on a plate lined with parchment paper
- Sprinkle the dark chocolate chips on top
- Cook in the microwave for 40-60 seconds
