There aren’t many protein bars or snack bars sold at the grocery stores that I could eat. I have IBS and follow the low-FODMAP diet, so there are some restrictions in my diet. Many snack bars contain dates or high fructose corn syrup that are high in FODMAPs and cause me stomach ache. So, I decided to create my own recipe. That’s how I came up with this Vegan Chocolate Strawberry Protein Bites recipe.
This recipe is super simple. You just mix all the ingredients together, roll into balls and that’s it. This recipe is vegan, gluten-free, low-FODMAP and refined-sugar-free. However, these bites taste amazing! The combination of chocolate and strawberries is so yummy! You wouldn’t believe these are healthy!
Peanut butter is my go-to nut butter, but you could use any nut butter you like in this recipe. If you aren’t following the low-FODMAP diet, you could use honey instead of maple syrup. The almond flour can be replaced with oat flour, for example. I used vegan chocolate protein powder in these, but you could also use, for instance, vanilla protein powder and just add some cacao powder to the mixture.
These Vegan Chocolate Strawberry Protein Bites are a perfect snack that you can have on the go. Homemade snacks taste always better than store-bought ones! Vegan Chocolate Strawberry Protein Bites
Ingredients
- 1/2 cup peanut butter
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup vegan chocolate protein powder
- 1/4 cup almond flour or oat flour
- 2 tablespoons chia seeds
Topping
- 1/4 cup crushed freeze-dried strawberries or shredded coconut
Instructions
- Mix all the ingredients together (except the topping)
- Roll into balls with your hands
- Put the topping you are using into a bowl and roll the bites in it
- Store in the fridge
