Healthy Santa Pancake
Christmas is just around the corner! This Healthy Santa Pancake is such a fun Christmas morning breakfast idea! It’s like having dessert for breakfast!
This recipe is gluten-free, dairy-free and refined sugar-free! I used strawberries to make the hat. For the beard I used Greek but you could use whipped cream too. Dark chocolate chips worked as eyes and mouth and a slice of a strawberry as a nose.
I made a protein pancake for this recipe. I used vegan vanilla protein powder in it. You could replace the protein powder with any flour. I often make my pancakes with buckwheat flour and that works perfectly.
This Healthy Santa Pancake tastes yummy and it’s also super fun to make! This would be a great breakfast to make with your family on Christmas morning.

Ingredients:
1 mashed banana
2 eggs
1 scoop vegan protein powder or 1/4 – 1/3 cup / 60 ml – 80 ml flour
Toppings:
10 strawberries, halved
1/2 cup Greek yogurt (120 ml)
handful of dark chocolate chips
Instructions:
- Mix the mashed banana and eggs together.
- Add the protein powder or flour and mix until combined.
- Cook on a non-stick skillet for a few minutes on each side.
- Let the pancake cool a little bit.
- Make a hat of the halved strawberries
- Put the yogurt into a piping bag and make the beard and the pompom
- Make the eyes and mouth of chocolate chips
- Lastly add a slice of strawberry to make the nose
