Easy Banana Pancakes

Simple recipes are my favorite! I always try to create recipes with as few ingredients as possible that are also easy to find. The recipe for these Easy Banana Pancakes is super simple and delicious! Such a great breakfast or snack idea!

These pancakes are gluten-free, dairy-free, refined sugar-free and paleo. The recipe contains only four ingredients. You can use any flour you have. The riper the bananas are that you use, the sweeter the pancakes will be.

I added some cinnamon to these pancakes, but you could also leave that out. Ground cardamon would also be a great addition!

Ingredients:

  • 1 mashed banana
  • 2 eggs
  • 1/4 – 1/3 flour of choice (60 – 80 ml)
  • 1/2 teaspoon cinnamon (optional)

Instructions:

  1. Mix the banana and the eggs together.
  2. Add the dry ingredients and stir.
  3. Cook on a non stick skillet with a little bit of coconut oil, about 1-2 minutes each side.
  4. Serve with, for example, maple syrup and berries.
