Healthy Chunky Monkey Muffins
These Healthy Chunky Monkey Muffins are paleo, refined sugar-free, gluten-free and dairy-free. The recipe is so easy that anyone can make these muffins!
I used only bananas as a sweetener in this recipe. The riper the bananas are that you are using, the sweeter the muffins will be. However, if you like really sweet muffins, feel free to add, for example, some coconut sugar or maple syrup to them. I love dark chocolate. But if you prefer milk chocolate, you can use that instead!;) The walnuts in the recipe bring a nice crunchy element to the muffins. You could use also pecans or any other nuts you like in these muffins. Or if you don’t like nuts at all, just leave them out! My recipes are always very adjustable, so you can modify them into your liking.

Ingredients:
- 3 mashed bananas
- 1/2 cup unsweetened creamy peanut butter (120 ml)
- 2 eggs
- 1/2 cup almond flour (120 ml)
- 1 teaspoon baking powder
- 1 cup crushed walnuts or any other nuts (220 ml / 150 g)
- 1 cup 80% dark chocolate chopped (240 ml / 140g)
Instructions:

Mix the bananas, peanut butter and eggs together.

In another bowl mix almond flour and baking powder together. Add the dry ingredients into the banana mixture and mix until smooth.

Stir in the walnuts and chocolate chips.

Pour into muffin tins lined with muffin liners.

Bake at 180 degrees / 350 in Fahrenheit for about 15 minutes or until a toothpick inserted to the center comes out clean.
