If you have been following my Instagram page @fitfoodieselma for a while, you know that I am obsessed with peanut butter! I add in into everything! Peanut butter and chocolate is my favorite combo, so I wanted to create a healthy Peanut Butter Chocolate Chip Mug Cake. This is my go-to recipe when I need something sweet and I need it fast!
This recipe is so easy that anyone can do it! You just basically mix all the ingredients together and pour into a mug and put it in the microwave to cook and you’ll have a ready cake. The recipe is gluten-free, dairy-free and refined sugar-free. If you want to make this mug cake paleo, leave out the buckwheat flour and add one tablespoon more of almond flour.
Mug cakes are the best! Often I crave something sweet after lunch, and if I don’t have any baked goods around and really crave something sweet, I often end up making a mug cake. So quick and yummy!
Peanut Butter Chocolate Chip Mug Cake
Ingredients
- 1 egg
- 1 tablespoon coconut sugar
- 1-2 tablespoons maple syrup (to taste)
- 2 tablespoons peanut butter
- 2 tablespoons almond flour put 3 tablespoons and leave out buckwheat flour if you want to make this recipe paleo
- 1 tablespoon buckwheat flour
- 1/4 teaspoon baking powder
- 1 tablespoon almond milk
- 3 tablespoons dark chocolate chips
Instructions
- Mix all the ingredients together.
- Pour into a mug (regular-big). It will rise in the microwave.
- Cook for 1-1,5 minutes on high in the microwave.
- Eat while still warm. You can serve it with a scoop of ice cream.
