When I was younger, strawberry ice cream was my favorite flavor. This Strawberry Smoothie reminds me of those times. I always make this smoothie when I feel like having something fresh and berrylicious.
I used coconut milk in this strawberry smoothie. It makes it so creamy! Coconut and strawberries are a dreamy combo. I topped the bowl with shredded coconut, banana and some fresh strawberries. Shredded coconut is such a great smoothie bowl topping. It adds a nice “crunchy” element to it.
If your blender can’t mix frozen fruits and berries so well, I recommend defrosting the strawberries before making the smoothie. I love to use frozen fruits and berries, because they give the smoothies the best consistency. I always have frozen bananas in our freezer. Every Sunday I go and buy seven bananas for the new week. That way I can make a smoothie anytime I want.
Not everyone with IBS can tolerate bananas. For over four years I didn’t have a single banana. I thought that they would make me feel terrible. Last spring I realized that the problem was with ripe bananas not with firm ones. I was so happy about that. You have no idea how much I had missed bananas. They have always been one of my favorite fruits. When I go to the grocery store, I always pick those almost green, very unripe looking bananas. If you don’t have IBS, I recommend using ripe bananas in smoothies, because they make the smoothies a lot sweeter.
In this smoothie there is no lack of sweetness because of the strawberries. Sometimes if I want to make a smoothie extra sweet I’ll add one date or a little bit of maple syrup. I can tolerate dates in small amounts but some IBS sufferers can’t. If you can’t have even one date, I would choose to use maple syrup as the sweetener.
Strawberry Smoothie
Ingredients
- 250 g frozen strawberries
- 1 frozen banana
- 1 1/2 dl coconut milk
- 1/2 teaspoon vanilla extract
- 1 tablespoon peanut butter
- 1 scoop vegan protein powder (optional)
Instructions
- Put all the ingredients into a blender and mix until smooth.
