It’s Thanksgiving and the time for everything pumpkin! I love this time of the year! This Pumpkin Spice Smoothie Bowl is a perfect breakfast to have during the holiday season. Cinnamon always reminds me of Christmas. This bowl will definitely take you to the holiday spirit.
Past two years I have spent Thanksgiving in New York with my mom. PSL lattes have been my go-to’s on those trips. This year we didn´t go to NYC, because I am so busy with my uni studies and the flights would have been super expensive. So, I needed to create a recipe that would make me feel like I would be in the city celebrating Thanksgiving. That´s how I got the idea to make a Pumpkin Spice Smoothie Bowl.
This smoothie is perfect for fall and Christmas time. I love having it for breakfast. My secret ingredient in this recipe is orange zest. It takes this pumpkin smoothie to a whole new level. Orange zest, pumpkin and all the spices are such a tasty combo.
I topped my smoothie bowl with frozen cranberries and shredded coconut. Homemade granola would be a great topping as well.
Pumpkin Spice Smoothie Bowl
Ingredients
- 1 frozen banana
- 1 dl pumpkin puree 1/2 cup
- 1 1/2 dl almond milk 3/4 cup
- 1 tablespoon maple syrup
- 1 scoop vegan protein powder (optional)
- 1/4 teaspoon pumpkin spice
- 1/4 teaspoon ground cinnamon
Instructions
- Put all the ingredients into a blender and mix until smooth. Top with your favorite toppings, for example, berries.
I used a bit less almond milk so it’d be thicker. It was amazing!
