Homemade bread is the best, right? If you have been looking for a gluten-free bread recipe that´s super quick to make and doesn´t contain yeast, here you go. This Quick Bread recipe is so easy and simple. You´ll have a ready loaf in less than an hour.
This bread has more a muffin-like texture. It is really soft, but so yummy. This recipe contains baking powder instead of yeast, which is why it´s so fast to bake. The bread is crispy on the outside and soft and chewy on the inside.
The recipe is gluten- and dairy-free. The eggs make this bread really fluffy. Because of the eggs, the bread is pretty high in protein.
I used dark and light gluten-free flour mixes from Virtasalmen Viljatuote in this bread. You can use any kind of gluten-free flours you like. You could also use regular milk instead of almond milk. I wanted my bread to be dairy-free, so I used almond milk.

Quick Bread
Ingredients
- 3 large eggs
- 3 dl gluten-free flour mix 1 1/4 cup (you can use any gluten-free flours you like)
- 2 1/2 dl dark gluten-free flour mix 1 cup (you can use any gluten-free flours you like)
- 1 tablespoon baking powder
- 1 teaspoon salt
- 3 1/2 dl almond milk 1 1/2 cup
- 6 tablespoons olive oil
Instructions
- Prepare a loaf pan with pan spray or line it with parchment paper.
- Separate the eggs, yolks into a bowl and the whites into another. Whip the whites to medium peaks.
- In a large bowl whisk together the flours, baking powder and salt.
- Add milk and oil into the bowl with the yolks and mix well.
- Pour the liquid ingredients into the bowl with the dry ingredients. Using a spoon, stir until combined. Fold in the egg whites.
- Pour the batter into the prepared loaf pan and bake at 180 Celsius degrees (350 F) for 40-45 minutes, or until a toothpick inserted in the center comes out mostly clean.
