Homemade bread is the best! I really missed the homemade rolls that my mum used to make until I came up with this recipe. These Gluten-free Oat Rolls taste just as good or even better as whole wheat rolls.
These rolls are so fluffy that no one will believe they are gluten-free. They also taste super yummy. These buns are not only gluten-free, they are also dairy-free. You can eat these for breakfast with butter or with peanut butter and jam or you could also use these as hamburger buns. I tried that and they worked perfectly! It´s so fun to make hamburgers from scratch. Homemade buns taste so much better than store bought.
I used psyllium in these rolls. Psyllium should be tolerated by most people with IBS, but not all. In this recipe there isn´t so much of that powder, so it should be fine with IBS sufferers. At least, I didn´t get any symptoms of these buns and believe me, I ate many of them. If your flour mix already contains psyllium husk, you don’t need to add any psyllium to the dough. Same thing if you are using regular non gluten-free flour, no need to add psyllium, it’s only needed for gluten-free baking.
The smell of freshly baked bread is just so good. I love it! I will be baking these rolls a lot in the future. They are so easy to make and nothing beats their awesome flavor.

Gluten-free Oat Rolls
Ingredients
- 2 cups water (480 ml)
- 11 g dry yeast (4 1/2 teaspoons)
- 2 tablespoons psyllium husk powder skip this step if your flours contain psyllium
- 1/4 cup olive oil (60 ml)
- 1 tablespoon maple syrup or honey
- 1 1/2 teaspoons salt
- 1 1/4 cup gluten-free oats
- 1/2 cup gluten-free oat flour (120 ml)
- 2/3 - 1 cup all purpose gluten-free flour mix (160-240 ml)
Instructions
- Heat the water in the microwave till 42 degrees (or according to the yeast package). Mix the yeast with the water. Add the psyllium and let sit for ten minutes until it’s “gel-like” consistency (skip this step if your flours contain psyllium)
- Add maple syrup, salt, olive oil and stir
- Add the oats and the flours and mix with a mixer for 2 minutes
- Pour the dough on a floured surface. Sprinkle the dough very lightly with more flour. Divide the dough into 12 equal pieces. Shape the pieces into rolls. Place them on a baking pan lined with parchment paper
- Let the rolls rise uncovered for 20-30 minutes.
- Bake at 225 Celsius degrees (440 in Fahrenheit) for about 15 minutes

These are fantastic – thank you so much for the recipe! I have a gluten intolerant boyfriend and have been trying to find THE recipe for perfect, fluffy bread which doesn’t involve 2984620589 different (and expensive) flours, and for an inexperienced baker like myself this recipe is perfect. I was shocked I’d actually done it and hadn’t baked lumps of cement like I normally do! They are so so brilliant – moist, bouncy, they don’t taste gritty or powdery and have a really excellent taste.
I made half a dozen rolls as a way to test out the recipe/my abilities (!) and changed a few minor things – I’ll write my ingredients below in case anyone else from the UK reads this.
For half a dozen rolls:
240ml water
13g instant gf yeast – look out if buying own brand as, for example, sainsburys yeast has wheat in. Allisons easy bake yeast is gf.
25ml olive oil
1/2 tbsp honey
3/4 tsp salt
1 1/2 tbsp psyllium husks (I dont have the powder – just the whole husks so I added slightly more. If using the powder, use 1 tbsp psyllium powder)
45g oats
96g oat flour (homemade by whizzing oats in nutribullet)
96g gluten free white flour – I think ours is just from sainsburys
Instructions as above. I baked mine at 200C fan oven for 15 minutes but did an extra 2 minutes just to give them a bit more of a crust. I also brushed the tops of mine with a very small amount of water and sprinkled poppy seeds on top before they went in.
Perfect for a taster – however I fully recommend baking the full dozen as we absolutely inhaled these in one sitting. Will immediately be baking more, freezing batches etc as it’s so much cheaper and MILES tastier than shop bought. I want to also try it as a small loaf, and try adding nuts/seeds in them. I also like to keep some of these in the freezer, so then I can just easily defrost them when needed! Homemade bread is literally the best!
Great recipe! I had found some GF oat rolls in the freezer section at Willys in Sweden. I am so glad I found your recipe. It also works great for hotdog buns. Much better than the Fria brand of hotdog rolls. And it was a super easy recipe to follow.
