This recipe is my brothers´ favorite. These Chocolate Mocha Squares are super yummy. They are so fluffy and sweet. They will definitely satisfy any sweet tooth.

The recipe is also really simple and quick to make. They are pretty similar to brownies, but these are a lighter and fluffier version with a frosting that tastes like chocolate and mocha. A perfect combo!
This is not my healthiest recipe, but everyone can enjoy some treats once in a while, right? Everybody needs sweetness in their life and these treats will for sure bring that

In Finland people always bake these Chocolate Mocha Squares to school fairs and all kinds of events. These are perfect, for example, to a birthday party. Every kid here loves these.

Chocolate Mocha Squares
These squares are a super yummy treat that everyone will love!
Ingredients
The batter
- 4 eggs
- 3 dl coconut sugar 1 1/4 cup
- 2,2 dl oat flour 1 cup
- 2 dl gluten-free flour mix 3/4 cup
- 3/4 dl cocoa powder 1/4 cup+1 tablespoon
- 2 teaspoons baking powder
- 1 dl lactose-free melted butter or vegetable oil 1/2 cup
- 2 dl lactose-free or dairy-free milk 3/4 cup (I have used rice milk, almond milk and lactose-free milk in this recipe and all of them have worked very well)
The frosting
- 7 dl confectioner´s sugar 3 cups
- 3 tablespoons lactose-free melted butter or vegetable oil
- 3 tablespoons cocoa powder
- 7 tablespoons coffee liquid, regular coffee (you can replace coffee with water if you don´t like the mocha flavor)
- 5 tablespoons cold water you can also put 12 tabelspoons of coffee and leave the water out completely if you like a stronger flavor.
Instructions
The batter
- Line a baking pan with parchment paper.
- In a big bowl mix eggs and sugar together with a mixer.
- In another bowl mix the dry ingredients together.
- Fold the dry ingredients into the egg-sugar mixture together with the butter/oil and milk.
- Pour the batter into a prepared baking pan. Cook at 430 degrees (220 in Celsius) for about 12-15 minutes or until a toothpick inserted in the middle of the pan comes out clean.
- Let the cake cool a little before frosting it.
The frosting
- Mix all the ingredients together in a bowl until smooth. Add more water or coffee if the mixture seems too dry.
- Spread the frosting on a warm cake with a spatula. Top with sprinkles or shredded coconut.
- Cut in squares and serve. Enjoy!
