I love pasta! I have been in Italy many times and nothing compares to the pasta dishes I have eaten there. But this Shrimp Tomato Parmesan Pasta gets pretty close, it is so delicious and creamy.
This pasta sauce is full of flavor. It tastes fresh because there are spinach and tomatoes and a little lemon juice in it. The pasta will take your mind all the way to Italy.
It´s not always easy to get flavor into dishes when you can´t use onions and garlic. But this Shrimp Tomato Parmesan Pasta has so much flavor, you won´t believe it until you taste it yourself. It contains paprika and a little bit of chili. And of course, there´s Parmesan cheese in it. It wouldn´t be Italian food without Parmesan, right?
This pasta sauce is so easy and quick to make. The recipe is low in FODMAPs and super tasty!
Shrimp Tomato Parmesan Pasta
Ingredients
- 2 tablespoons olive oil
- 3 1/2 dl shrimps 1 1/2 cups
- 3 1/2 dl fresh cherry tomatoes 1 1/2 cups
- 12 dl loosely packed fresh spinach 5 cups
- 1 tablespoon lemon juice
- 5 tablespoons grated Parmesan cheese or more, to taste
- pinch of salt
- pinch of balck pepper
- 1-2 teaspoons paprika
- pinch of chili powder to taste
- 1 dl lactose-free cooking cream or dairy-free sub 1/2 cup
- handful of spaghetti gluten-free
Instructions
- In a large pot cook the spaghetti in a boiling water according to package directions.
- Chop cherry tomatoes. Wash spinach.
- In a pan heat olive oil and add the tomatoes. Cook until tomatoes have softened a little.
- Add the shrimps, lemon juice and the spices. Cook shrimps until they start to turn pink.
- Add washed spinach and heavy cream and bring to boil. At this point you can already add some Parmesan to the sauce if you like.
- When pasta is cooked add some olive oil to it.
- Add the cooked pasta to the sauce.
- Before serving sprinkle Parmesan cheese on top.
- Enjoy!
